Pumpkin Cinnamon Muffins


One of my favorite fall spices is cinnamon! I know this may seem a little cliche but the smell of baking with cinnamon always welcomes in the winter season for me. Theses pumpkin muffins have similar spices to pumpkin pie spices but are heavier handed on the cinnamon. I use 100% pure pumpkin puree for a nice smooth texture with a punch of pumpkin flavor. Next I mix-in a combo of brown sugar & maple syrup to sweeten the muffins for an added level of flavor with the maple syrup. Another secret weapon here… bourdon vanilla! This is one of my all-time favorite ingredients to bake with in the winter because it really takes it up a notch when looking for a little extra somethin’ somethin’ to boost the flavor in your recipes. Mix everything in a bowl, scoop in your muffin tray, & top with cinnamon sugar. The cinnamon sugar creates a crispy top that adds a touch of texture & extra sweetness that everyone will love.

Pumpkin Puree

I like to use 100% pure canned pumpkin puree for this recipe. If you have some pumpkin around you can make your own pumpkin puree by roasting the pumpkin & blending until smooth. Another option for a slightly different flavor is substituting the pumpkin puree with butternut squash. Butternut squash pairs well with the same spices as pumpkin & has a similar consistency.

NOTE: When shopping for pumpkin make sure to not get mixed up with pumpkin pie filling instead of the pumpkin puree. Pumpkin pie filling has added sugar & other ingredients so it is NOT the same of 100% pumpkin puree.

Bourbon Vanilla

Like I mentioned before, I am a huge fan of baking with bourbon vanilla. I make my own vanilla so it is available at my fingertips when I’m baking. Finding bourbon vanilla can be more of a challenge to find in your typical grocery store so regular vanilla can be substituted. They will still be amazing & super flavorful!

If you have booze around but not bourbon vanilla another option is to use regular vanilla & just add a splash of bourbon or a similar liquor into the batter

Muffin or Loaf?

Though this recipe is for muffins, it can easily be transformed into a loaf shape! Just pour the batter into your favorite loaf pan & increase the baking time to about an hour. Test with a toothpick or knife to make sure the loaf is baked all the way through. Slice up & serve

The Recipe

Pumpkin Cinnamon Muffins

*MAKES=12 muffins
*COOKTIME=30 minutes
*BAKETIME=18 minutes

NOTES: Make sure to use 100% pure pumpkin & regular vanilla can be substituted for the bourbon vanilla


  • 1/2 cup canola oil
  • 2/3 cup brown sugar
  • 1/2cup maple syrup
  • 1 cup 100% pure pumpkin puree
  • 2 egg
  • 1 1/2 teaspoon bourbon vanilla
  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 3 Tablespoons sugar & 1 teaspoon cinnamon (mix) for topping


  1. Begin by preheating the oven to 350 degrees & preparing your muffin tray.
  2. Grabbing a large bowl & mix together the first 6 ingredients (wet ingredients) in the bowl until thoroughly combined.
  3. Next add in the remaining ingredients (dry ingredients) into the bowl with the wet ingredients & mix until just combined
  4. Divide batter into 12 muffs & top with cinnamon sugar.
  5. Bake muffins until browned on top & slightly poofy. About 18 minutes
